Christmas Menu

I think I've finally completed putting my Christmas Day menu together!  Here we go...

  • Pickle Dip:  (1 block of cream cheese, 1-2 kosher dill pickles, 1 TBSP Mayo, and 1/4 cup of pickle juice from the jar)  May need to add more or less pickle juice to make to your desired consistency.  Best served with Lay's Wavy Chips.
  • Veggie Tray
  • Fruit Tray

Main Meal:
  • 7 Layer Salad (my aunt is making this!)
  • Smoked ham from a local butcher

  • Chocolate Chip Cookie Sandwiches (BabyCakes NYC recipe for cookies & frosting)

The majority of the recipes I'm using, I found on Pinterest...of course!  When a holiday is held at mine or my mom's house, everything is 100% gluten free, and most don't even realize.  A few of my family members are bringing something to help me (veggie tray, fruit tray, 7 layer salad, and another appetizer/snack & dessert).  For my family members who aren't sure which foods are gluten free, I always suggest to bring pop or a bag of chip or something.  My #1 rule is when in doubt, come without!

Hopefully, you'll be these recipes will be helpful!  I'd love to know if any of you tried them, too!  Since I'm going to start digging into my Christmas food prep tomorrow, I'd like to wish you all a very Merry Christmas and Happy New Year...just in case I don't get to post anything before then!  Hope you all get to enjoy lots of Gluten Free food over the holidays!

Yummy Cookie Recipes

Now that the holidays are quickly approaching, I thought to pass on some yummy cookie recipes.  A very simple on that I usually use is 3 ingredients:  1 cup peanut butter, 1 cup of sugar, and 1 egg.  Recently, Celiac & the Beast posted the following recipe that I have also made, and extra yummy:

Lately, I've been on a BabyCakes NYC baking spree...made their chocolate chip cookies, and finally perfected their frosting!  If you don't have their app, I highly recommend it.  I have one of BabyCakes cook books -but, having a video on the app makes it much easier to be sure your making it correctly.  Plus, I noticed that their recipes on the app have less ingredients, and easier for those without experience with all the GF me!

I'll be hosting Christmas for my family this year, and since our home is 100% GF, all will have no choice but to eat delicious GF food!  We have a house rule of "when in doubt, come without!", and am thankful that all respect it.  I'm highly sensitive, and suggest pop/beverages, or chips to those who want to bring something.  Closer to Christmas, and once I get organized, I'll be certain to post all the recipes of the food we will be having.

Hope you all had a great Thanksgiving, and sorry for disappearing for a bit.  If you have any questions or suggestions, please don't hesitate to drop a line.  As always, stay tuned!

Gluten Free Holidays

Can you believe that Thanksgiving is 2 weeks away...and then Christmas will be here before we know it?!?!  How do you handle your holidays, and being Gluten Free?  I'm very lucky, my mom or I usually host Thanksgiving for the family, and everything is 100% Gluten Free.  At time, I feel it's tough for those around me to realize how much anxiety goes along with me and the holidays...not only for myself but for my daughter, too.  When we attend an event, I always have so much anxiety, and fear of food being 100% safe (meaning truly gluten free, and no contamination).  It's tough for those without allergies to truly get it, and not accidentally insult someone.  It's a true challenge for me to truly trust a food being safe because a lot assume that because they made something GF that it's safe -but, don't realize the contamination factor.  For example, if someone makes a non GF cake then makes a GF cake, it only takes one little bit of flour to be left on the mixer to make a Celiac or someone Gluten Intolerant sick.  The other part is when we get contaminated, we maybe "sick" for a day or 2 -but, it takes at least a month for our guts to heal themselves.

Someday, I hope to finally have respect from others, and especially respect my GF comfort zone.  I truly appreciate the kind gestures of family & friends including me with GF food, and don't ever mean to insult them  by not eating such foods.  When my daughter, and myself's health is involved, I am extremely cautious, and hope that someday all will truly understand, and more importantly respect it.

Ever since, I was diagnosed, I always have truly dreaded the holiday.  It isn't until you are diagnosed with a food allergy that you realize just how much the holiday revolve around food!!  Every holiday function I attend, I take something safe, and keep some for myself & daughter separate so we have something 100% safe.  Typically, I take a dip, and it is inevitable that someone forgets, and dips a pretzel (not GF) -so, our separate safe serving saves us!

When I host something at the holiday, everything is 100% GF, and ask those coming to follow the house rule of when in doubt, come without.  Typically, I make all the food, ask those coming to bring chips, beverages, or ice cream (obviously no cookie n cream and such), and then I can double check the labels, too!!

Just a little holiday Thanksgiving tip to pass on.  Keep in mind that if non Gluten Free stuffing is cooked in the turkey, the typically safe turkey is no longer Gluten Free.  Also, be cautions of basting, and such for cooking the turkey...and of course gravy.

Stay tuned for more holiday fun!

The National Foundation for Celiac Awareness

This evening, I received great news of being added to the list of bloggers on the National Foundation for Celiac Awareness (NFCA) website.  I'm so honored.  If you haven't already, be sure to check out their website for extremely useful information:

Disney & Gluten Free

Good Afternoon All!!  Hope you are keeping warm on these chilly days!  I'm sorry it's been a while!

I'm just getting back from a Disney trip, and Disney Cruise, and have finally recouped!  Traveling sure does time me out -but, all the memories make it all worth it!  Have any you ever done a trip to Disney or done the cruise?  If not, I highly recommend it.  I have so much anxiety when traveling and usually in general -but, not in Disney!  It is so nice to enjoy such amazing food, and not have to worry if it's safe.  They are amazing with all allergies, not just gluten.  The chef personally comes to talk to you about the menu, and pretty much can make whatever you want!  For the cruise, I ate a lot more than I should have -but, all was so delicious and inclusive, I couldn't help myself!

Disney is such a comfort especially since when you say you have a gluten allergy, not a single person looks at you like you have two heads!  Also, you can eat anywhere on Disney property, and not have to pick and choose.  If you have haven't experienced Disney, you sure need to do so!  If you need any suggestions or recommendations, I'm more than willing to answer any questions.

Stay tuned, and have a great rest of the day!

Happy Friday!

Happy Friday All!!  Yesterday's dinner was yet another Pinterest recipe that I found and quite easy to make!  My daughter requested Mac & Cheese for dinner -so, the Cheeseburger Pasta worked out perfectly!  The recipe was as cheesy as I like it -but, will certainly adjust the recipe accordingly the next time.  The only adjustments that I made to the recipe was GF pasta, and sprinkle feta cheese over the top.  Isn't there a saying that Feta makes everything better!?!?

Click here for the Cheesburger Pasta Recipe

Tonight's dinner is a mystery, yet!  It will either be pizza or something on the grill.  Just may be the grill since the nice weather may not be lasting much long, and we have to take advantage while we can!

Anyone having anything yummy for tonight that they would like to share with us all? Hope you all have a great weekend...and have lots of yummy GF eats!

One last thing....I've added some "gadgets" to the blog page.  You can now get the blog post  automatically  emailed to you by adding your email address at the top of the page, and an option to share this blog on Facebook or Twitter.  :-)

Halloween Chex Mix

Thought I'd pass on a little holiday treat idea.  This recipe will need adjusted slightly to be Gluten Free...just substitute GF Pretzels.  I made this last year and it was a big hit in our family.  Recently, I picked-up the candy corn, and had to hide them from my husband and daughter...or there would be none left for this recipe!

Hope your friends & family like this as much as we do!  Click here the Halloween Chex Mix Recipe

Productive Fall Day!

Yesterday was a productive day around the house.  By noon, I felt quite productive!  We made mini chocolate chip cupcakes (with Betty Crocker GF Yellow Cake Mix), put Turkey Chili in the crockpot, made a big salad, and grilled cheese (with a pickle is a must for my daughter), and cleaned the kitchen.  Not to mention we did our morning errands, too!

We all really enjoyed the chili yesterday, and topped it off with shredded cheddar, and crushed tortilla chips.  After dinner, we had a relaxing movie night, and watch Cinderella, and enjoyed some popcorn.  Ok...back to the Chile recipe!  As always, I found the recipe on Pinterest, and have made it before...and will continue to keep in my rotation!
Click here for the Turkey Chili Recipe

I'm thinking tonight is going to be a left over night, and enjoy the remainder of the comfort foods from this week.

Hope you all have a great rest of the day, and have some yummy gf food!

Easy Comfort Food!

Hope you all had a great weekend!  Can't believe today is already October 1st!  Not quite sure where September went!!

We had a nice, lazy weekend -but, accomplished a lot!  One of my accomplishments was putting together my 2 week meal plan -but, now just need to do the shopping for it!  Often times, I wish grocery stores had a delivery service -but, with a gluten free lifestyle, I'm not sure we'd have all safe food in the bag!  Since I didn't get my grocery shopping done, I put together 2 meals of things that I always have in the house:  Risotto & Chicken Caruso.

Yesterday for dinner, I made Risotto with shrimp, peas, and bacon.  I follow a recipe that I found of which is easy...and delicious!  My 2 year old loves it...and so does my hubby!

Click here for the Risotto Recipe

Today is a crockpot meal for dinner.  I'm making one of our favorite family recipes:  Chicken Caruso.  It can be made in the crockpot or stove top.  It's simply marina sauce, chopped celery, pineapple chunks, and pieces of chicken over rice.

Hope you all have a very enjoyable Monday, and a Happy Gluten Free Day!

Happy Friday!

Well, I ended up getting a lot of motivation when I got home yesterday, and made the soup I posted yesterday (cheesy vegetable chowder)...and biscuits!  We all loved the soup, and definitely will be making it again!!  For the biscuits, I usually make them with Pamela's Baking Mix -but, this time I tried the Bisquick Gluten Free Mix.  My preference is Pamela's Baking Mix version -but, both are good.

In addition to the soup, we had chicken tenders (Bell & Evans brand) and French Fries (Alexia House Cut Fries).  My 2 year old loved dipping her fries and chicken in her soup!

Tonight is PIZZA night!!  We love Udi's pizza shells, and Chebe Bread Sticks.  We typically have cheese sticks too!  For the cheese sticks, I use mozzarella sticks rolled in olive oil, Parmesan cheese, and Gillians Italian GF bread crumbs...put in the oven for a few minutes while pizza is cooking to soften cheese.

Wishing you all a great weekend!!

Lazy, Fall Day

The rain, dreary weather has officially affected me!  This morning, I had no motivation to put the soup I had planned for dinner together.  Hopefully, when I get home I will have found my motivation and make it then.  If not, it may be a take out night or I'll have to throw something together quickly...and get creative!  Do any of you have a place to fall back on for take out?  I have 1 or 2 -but, that is about it.  One of my favorites for take out is Juniper Grill.

In the event I find my motivation, here is the recipe of the soup I plan to make...even if it's for tomorrow:

Cheesy Vegetable Chowder Recipe

We don't often do take out because there may be options -but, its a lot of trust that there is no contamination.  From time to time, I do get "glutened" and it takes me a while to get the guts to try eating out again.  My hope...and real dream is that someday there will be a 100% Gluten Free restaurant.

While on the topic of eating out, Celiac Central posting a very good article that is great read, and thought I'd pass it on:

 The Gluten-Free Rush Article

Hope you all have a great rest of the day, and hope you all have a lot  more motivation that me today!

Slow Coooker: Cheesy Chicken Tater Tot Casserole

Good Morning All!  Its a rainy fall day, and I'm in the need for some comfort food...and not feeling like cooking!  So, once again, I discovered  this recipe on Pinterest, and it looks yummy...and simple!

Link to Cheesy Tater Tot Casserole

Please keep in mind even though we eat Gluten Free...we can eat's all in how its made, and prepared.  For example, we can eat donuts, and breaded chicken by using different ingredients -such, as GF flour mixes.  Also, don't forget to always check your labels.  Manufactures tend to change ingredients often, and it's better to be safe than sorry.

My hopes with this blog is to help you see how easy, and delicious the Gluten Free lifestyle can be.

Wishing you all a great day...stay warm and dry!

Toffee Apple Dip

Hope all are having a fantastic Tuesday...and thought I'd pass on a little sweetness!  I'm always looking for a quick, yummy snack or something to take to gathers...and think this is a perfect fit!  Of course, I found it on my new favorite blog (Six Sisters Stuff).

Hope you all have a great rest of the day, and enjoy this sweet snack!

Back on track...

Happy Monday All!!  I'm trying to hard to get back on track, and stay on top of my meal planning!!  I'm going to start posting what I'm making for dinner, and hopefully help you with some easy recipes.  I'm big on simple, easy recipes.  Guess you can say less fuss = a must!

So, tonight is a late night for getting home, and am counting on my crockpot to do all the work!  This evenings recipe came from a blog I discovered on Pinerest:  Six Sisters Stuff.

The recipe needed adjusted just a bit to make Gluten Free.  To make the recipe Gluten Free, I had to make my our Cream of Chicken Soup (1 cup of cold milk, 2 TBSP corn starch, 1 1/2 TBSP butter, and 1 GF bullion cube).

All I'll need to do when I get home is make some rice or GF pasta!  Just a reminder to always double check your labels!  Here is the link for tonight's recipe:  Italian Chicken Recipe.

Hope you have great rest of the day...and enjoy the Italian Chicken!

Allergy Alert Necklace Options

As I have mentioned, I have a 2 year old who is 100% Gluten Free.  We felt that was the best thing for her, and me with the risk of contamination, and such.  Not to mention our house is 100% Gluten Free, too!  A few months ago, our decision was validated when her Celiac & Gluten Intolerance Gene test came back positive for both!  One of our biggest challenges is at gathering, since she can't communicate she is Gluten Free.  Recently, she started to wear a bottle cap necklace from Zuzilly that simply states "Gluten Allergy" on a sticker.

(sorry, the picture wouldn't rotate for me.)
Since she is only 2 (soon to be 3), the sticker is starting to wear off quickly -so, I've been on a search for another necklace to last.  We have a few Gluten Allergy alert bracelet -but, have found the necklace to be a bit more in your face, and easier to notice.  My recent find was on Etsy:  Once Upon a Sugar Tree (Link to Etsy: Unce upon a Sugar Tree) will make their necklace to say whatever you would like!

Feel free to pass on any of the finds you may have found, too!

Recipe from BabyCakes NYC

Hope you all had a great Labor Day, and had lots of yummy food...Gluten Free of course!  One of my favorite bakeries that I discovered in Disney is BabyCakes NYC...and can't ever get enough of it.  At the Disney location on BabyCakes NYC, all their goodies are Gluten Free...and delicious.  Their icing is my absolute favorite.  I've tried to make it on my own from their recipe book, and just haven't had any luck mastering it yet...but, will eventually!!

This morning, I received the BabyCakes News letter and thought I'd pass on the recipe from it for Rice Krispie Blocks:

1 10 ounce box of Gluten-Free Brown Rice Crisp Cereal
1/4 cup melted coconut oil
1 teaspoon salt
10 ounces vegan gluten-free marshmallow cream
1 tablespoon vanilla extract
Brush 1/2 sheet pan with oil and set aside.
In a medium bowl, scoop in marshmallow, oil, salt and vanilla and mix. Pour in rice cereal and continue mixing until marshmallow is evenly distributed.
Pour mix into a pan and chill for 1 hour. Cut into 3" squares... And there you have it!

BabyCakes NYC offers yummy goodness that is one if not more than any of the followingRefined Sugar-free, Gluten-free, wheat-free, soy-fre, casein-free, egg-free, vegan, kosher bakery.

Hope you have a great rest of the day...and will post something soon!

Sunday YUMday!

Yesterday, we had a day full of delicious food...if I do say so myself!! I felt like a true Betty Crocker! We celebrated my dear friends birthday, and ate so much we all sat and did nothing but relax pool because we were so full!

My hubby made his secret recipe for Ribs, my dear friend made a Strawberry Spinach sale with homemade dressing, and I put the rest together:
 - Chicken Tenders for the kids (chicken breast dipped in hidden valley ranch dressing, and boxed mashed potatoes flakes cooked for 20 minutes (approx.) on 375)

- Chicken Caruso (a family recipe of marinara sauce, pineapple chunks, celary, and pieced of chicken over a bed of rice). Can be made on the stop top or long s pineapples & celery are tender. If making on the stove top, cook the chicken first...if making in the crockpot, throw all the ingredients in, and cook on low for 6 hours.

 - Peanut Butter Cookie Crust Pie with Bryers Peanut Butter Cup Blast Ice Cream. (simply made crust with 1 cup sugar, 1 cup pb, and 1 egg, and baked at 350 for 10 minutes). After if cooled for an hour or 2 I added the ice cream, and decorated.

- PB cup 0b cookies: Since I didn't need the entire cookie recipe for the crust, I made some cookies with the remaining. in a mini muffin tin, I added 1 scoop of PB cookie dough, baked for 10 minutes on 350, then when I pulled them from the often, I added mini reese PB cups...mmmm good!

 - We also had corn on the cob, and fresh cut fries for the kiddos!!

My little munchkins favite meal is Chicken Caruso -so, she mainly ate that -but, certainly tried everything else too!!

Also, we had fruit from our local farm! This AM, I made mini peach muffins with Pamela's Mix, too!!

Don't forget to let me know if you tried anything, and what you thought of it!

For pictures of the cookies and pie, please check out the Happy Go Lucky & Gluten Free Facebook Page!

Food for thought

My apologies for neglecting you lately!  Recently, I've been wishing there were more GF options in my area.  There are several places that have a GF menu however, there is still a risk of contamination.  I'm seriously considering finding local restaurants that will complete the NFCA (National Foundation for Celiac Awareness) or GIG (Gluten Intolerance Group) program to ensure knowledge of GF food preparations.

This week, I received a post card from NFCA: Appetite for Awareness on September 23rd, and am seriously considering going.  How amazing would be to go somewhere...and be able to eat EVERYTHING there?!?!  So, wish Pittsburgh had an event like that!  Have any of you attended an event as such?  Would love to have some feedback.

Hope all is well with you all, and as always, stay tuned!!

Parmesan Crusted Chicken

So excited to try tonight's dinner:  Parmesan Crusted Chicken.  We will probably have Trader Joe's french fores, and corn with it, too!

Of course, I found the recipe on Pinerest!

Link for Parmesan Crusted Chicken Recipe

If you make it, be sure to let me know what you think!

Just a reminder...if your house isn't 100% GF, to use aluminum foil on the pan to avoid cross-contamination,  a squeeze jar of mayo or a new jar of mayo to avoid contamination from crumbs, and of course use GF bread crumbs. Enjoy!

Recipe from a new cookbook: Cranberry Chocoalte Chip Cereal Bars

Yesterday during a trip to Barnes and Noble, I found a bargain priced cookbook:  Allergy-Free Cookbook (Gluten Free, Dairy Free, Egg Free, Nut Free).  Last evening, I made the Cranberry Chocolate Chip Cereal Bars, and enjoyed them this morning!  My daughter (who is 2 1/2) ate her whole portion...and so did my nephew and niece who I would classify as picky eaters!

The recipe is as follows:
6 1/2 cups gluten-free corn or rice cereal squares (I used Chex Rice Cereal)
1 / 2 cup (1 stick) margarine (dairy free if needed)
1 bag (about 10 ounces) miniature marshmallows
1 package (6 ounces) dried cranberries (about 1 1/3 cups)
1 cup semisweet chocolate chips (dairy free if needed)

1.  Line 13x9 inch pan with foil; spray with nonstick cooking spray

2.  Place 2 cups cereal in large bowl.  Coarsely crush with back of large spoon or hands.  Stir in cranberries.

3. Melt Margarine in large saucepan over low heat.  Add marshmallows; stir constantly until melted and smooth.  Remove from heat; stir in remaining 4 1/2 cups whole cereal and crushed cereal mixture until well blended.  Stir in chocolate chips.

4.  Press mixture into prepared pan.  Cover and refrigerate 30 minutes or until firm.  Remove from pan using foil; cut into squares.

Makes about 30 squares

Note:  This recipe can be made Gluten free, dairy free, egg free, and nut free.

I would love if you would make a comment of what you think if you make them!

Grilling Goodness

Tonight's dinner: grilled yummy goodness Tonight I grilled tuna steak, shrimp, peaches, and potatoes. The tuna steak and shrimp were seasoned in lemon juice, olive oil, and citrus grill seasoning made by durkee. In addition, we had corn on the cob from Trader Joe's I love summer for the reason of being able to cook on the grill. Now, all I need to add a nice cold, Michelob ultra lite cider!! If you would like to see how it all turned out, be sure to check out the picture posted on the happy go lucky & gluten free Facebook page. Hope you all have a great rest of the evening, and talk to you soon!

Dinner tonight??

Good Afternoon all!!  It's a chilly day here in da Burgh, and I have no motivation to think about what to make for dinner tonight!!  Suggestions are more than welcome!!  I hope to use my ground turkey -so, more than likely we will be having Taco Salads...but, I'm not in the mood for it!!

Whatever I have for dinner tonight, I'm finally going to be able to enjoy a Michelob Ultra Light Cider.  I've been on the search for it in my area, and my dearest husband finally came across it!

Hope all of you have a great rest of the day, and talk to you soon!!

Tonight's Dinner: Slow Cooker Bajio Chicken

My apologies for not blogging over the past few days!  However, I couldn't pass up blogging about tonight's dinner:  Slow Cooker Bajio Chicken.

This recipe was discovered on Pinterest, and was absolutely delicious.  I made a few minor adjustments:  instead of regular salsa, I used Natures Basket Black Bean & Corn Salsa, and skipped the green chilies.  In addition, I warmed a corn tortilla, added shredded cheddar...simply said...YUMMY!!!

Please be sure to let me know if you make it...and ENJOY!

Tonight's Dinner: Hot Chicken Salad

This morning, I made my dinner before work, and I can't wait to get home to try it!  I replaced croutons for GF toast, and didn't add the almonds.  Also, for the breadcrumbs, I used Gilligan's.  For a little extra flavor, I sprinkled some Italian Salt Seasoning.

If you make it, let me know what you think!

Thought I'd pass this on:

Great News in the Celiac World!

Last Friday,  the NFCA (National Foundation for Celiac Awareness) made their announcement about resigning the "Amber" designation!!

In my opinion, The Celiac Chicks said it perfectly..."Basically, gluten sensitivity it not to be taken lightly. You know those people that tell you, "I'm just gluten sensitive, so I don't have to be as careful as someone with celiac..."? They are misinformed."

Recently, more than ever, when I can't eat something and explain I'm on a GF diet, people have responded "My friend is on that diet to loose weight".   As a Celiac, this is very frustrating.  So many precautions need taken to prepare safe, gluten free food for a Celiac, not those without a medical condition.  Due to this, it is misleading for those who are misinformed or uneducated about Celiac Disease.  This month is Celiac Awareness Month -so, spread the word hand help educate as many as you can!!

Happy Monday!

Happy Monday, All!  Today, was a typical Monday, and tough to find motivation to get moving!!  Because of lack of motivation, I didn't make what I originally planned to make (Cheesy Chicken Ranch Lasagna)  However, I ended up with a simple yet, delicious dinner tonight.  Yesterday, I marinated chicken breast for dinner -but, ended up having PF Changs take-out instead!  So, this morning, I put the chicken marinated in Cookwell & Company's Olive & Lemon Vinaigrette (labeled GF) to  use, and cooked it on the grill!  The side dish I made was a corn & black bean salad recipe that I found on Pinterest:  1 can of black corn, 1 can on corn (since fresh corn on the cob isn't too flavorful yet), 1/2 of a red pepper chopped, juice of a lemon, 6-8 tablespoons of olive oil, fresh chopped cilantro, and topped with avocado.  This morning, I put the salad together, and grilled the chicken before heading out the door.  Then, when I got home this evening, I just had to warm up the chicken. All of it was so flavorful...and simple!

Hope you all had a great Monday, and don't forget to let me know what you had yummy for dinner!!

Tonight's Dinner: Chicken Taco Bake

This morning, before I left, I made tonight's dinner, and can't wait to try it!!  I've been finding a lot of great recipes on Pinterest, and tonight's dinner is one of them.

Chicken Taco Bake Recipe

I made a few alterations to the recipe (no olives or chilie's, less taco seasoning, and no chicken since we had it last night)...and of course GF pasta!  I'm not much of a recipe follower , and always adjust to our liking or to make GF.  You can truly make any recipe to be GF, and delicious...I do it all the time!

Gluten Free food aren't always safe...

Lately, I've been hearing more and more of places offering Gluten Free foods -however, they aren't  safe for those with Celiac or Gluten Intolerance due to cross-contamination.  My mom just mentioned that she was down the strip district, and was tickled pink to see GF biscotti's only to find out they are GF -but, not made for those who have food allergies. In other words, they weren't GF!!

Those with Celiac or Gluten Intolerance, please be careful, and verify product being made in a dedicated GF facility, and check your labels.

To help our voices be heard on this issue, please take a moment to submit the following petition:

Enjoy the rest of your Monday, and stay tuned for more GF updates, and recipes!

Happy Mother's Day!

We had a very enjoyable day. My amazing cousin, Kayla, hosted our family Mother's day get together, and made everything Gluten Free...and was delicious. We had a deli tray w/ Udi's gf buns, baked ziti, spinach strata, chicken waldorf salad, key lime fudge, cheesecake stuffed strawberries, pickle dip, fruit, and peanut butter chocolate pretzel cookies. I'm truly blessed to have such an amazing family that is supportive, and understand our gluten free lifestyle. As my cousin said today, "it's really no different than normal food, it's just being mindful". And I counldn't agree more. Hope you all had great day with special people...whether you are a mother, grandmother, and, or special someone in a child's life...Happy Mother's Day!!

Happy Friday!

I've completely slacked with cooking dinner, and meal planning this week!  Typically, I plan my meals out for 2 weeks, and do all the shopping at once to make less trips to the grocery store.

So far this week we had the following:
  • Chicken Caruso (a family recipe consisting of marinara sauce, pineapples, celery, and pieces of chicken over rice); made in the crockpot
  • Grilled Chicken (marinated in hidden valley ranch seasoning, and olive oil) with Grilled Corn and Potatoes
  • Mac & Cheese (GF pasta with Velveeta cheese sauce) & left over chicken!
  • Tuna Melt (tuna, mayo, hard boiled eggs, and cheese) on a GF bagel (Udi's)
  • Tonight just may be a Pizza night!!
Even though I slacked this week, every meal was easy to make, and deliciously GF!   I stick by the KISS method (Keep It Simple & Safe)!  As often as I can, I use the crockpot so our dinner can cook while we are at work, and be ready for us to sit down to eat.  Now that the weather is nice, I also like to grill a lot.  Don't forget if your home isn't 100% GF, to make sure the grilled is cleaned or food is cooked on foil to avoid contamination.

Stay tuned for more yummy dinner ideas!

GF Food For Thought

A dear friend of mine passed on a very interesting article to me yesterday, and I thought I'd share it:

Gluten Free Glutton

When my daughter was born, my husband and I decided to keep our daughter 100% Gluten Free (GF) until she was able to communicate any symptoms to us.  Not to mention since our home is 100% GF, it just made sense.

Recently, we did an oral swab test that another dear friend told me about that tested for Gluten Intolerance & Celiac Gene.  The results for  my baby girl were she carries both the Gluten Intolerance Gene and Celiac Gene -so, it was a good thing we kept her 100% Gluten Free.

Thought I'd pass this on:
Yummy Trader's Joe's Find:
During my latest Trader Joe's trip I spotted their Sweet Potato Chip Rounds.  Last night, I finally tried them...and they are delicious!!  I had them with guacamole, and later with fresh salsa.  We all loved them, and so glad I found them!!

Hello Blogger World!

I'm new to the blogging world -so, bare with me, please!! :-) This blog will hopefully be found useful to anyone with Celiac, Gluten Intolerance, or who are Gluten Free for any other reason.

I was diagnosed with Celiac Disease almost 9 years ago, and wouldn't change it for anything!  Our home is 100% Gluten Free, and we have a house rule of when in doubt, come without!  Most times, our guest don't even realize the food is Gluten Free!

From time to time, I'll post recipes, gluten free finds, and anything I think others will find interesting.  Stay tuned....
